This is a different take on a traditional barbecue chicken recipe and the grill doesn't have to be fired up to create a mouth-watering treat. The combination of brown sugar and vinegar give it just the distinctive flavor the chicken needs to make it juicy and succulent.
Make the entire dish ahead of time if preferred, and then just re-heat when it's time to eat. It's just as good later as it is when it's first prepared.
Stove Top Barbecue Chicken
What is Needed
Ingredients needed for this recipe include:
- Large skillet
- 4-6 boneless chicken breasts (bone-in works fine but allow extra time for cooking)
- 1 medium onion, peeled and finely diced
- 1 tablespoon olive oil
- 1/4 cup water
- 1/2 cup ketchup
- 3 tablespoons Worcestershire Sauce
- 3 tablespoons chili powder (add more for a hotter sauce)
- 3 tablespoons light brown sugar
- 3 tablespoons cider vinegar
Put it Together
- Wash chicken thoroughly and pat dry with a paper towel. Remove any visible skin or fat to reduce fat and calorie content. Set aside while preparing barbecue sauce. If sauce is not being prepared immediately, be sure to refrigerate the chicken until ready for use to avoid potential contamination.
- Heat oil in large skillet and saute onions until clear and tender. Add water and ketchup slowly, and stir well to combine all ingredients. Add remaining ingredients and stir until mixture begins to bubble. Add chicken gently to avoid splashing sauce. Coat chicken well with the sauce and turn stove-top burner to medium for about 10-15 minutes while chicken cooks. If sauce seems to be too thick, add a little more water. The sauce can be thickened again when chicken is done and ready to serve.
- Turn burner down to low and place lid on chicken and sauce, and allow it to simmer for about 45 -60 minutes. Stir occasionally to avoid sticking and turn chicken to re-coat as it simmers. Just prior to serving, increase heat and stir often to thicken the sauce if desired.
- It's always best to use a meat thermometer to make sure chicken is done all the way through.
Serve hot chicken with baked potatoes and broccoli for a delicious treat.
